foooood!!!

i made this bagel sandwich for lunch a couple days ago. i wanted to share it with you because it was delicious and i want to give you an easy dressing recipe that i swear by (which i originally found in one of giada delaurentiis' cookbooks.) i covered both sides of the bagel with my favorite alternative to butter: earth balance vegan buttery spread. the contents of this sandwich are as follows: mixed greens w/ shallot vinaigrette dressing, poached egg, pasta sauce and shaved fresh parmesan. mmm!!! 
shallot vinaigrette dressing: 
mince 1 medium shallot and throw in a bowl. drench minced shallot w/ balsamic vinegar (just enough to make a little puddle in the bottom of the bowl.) add olive oil (equal amount to balsamic.) add salt and pepper. add about a tablespoon or less of honey. whisk it all together w/ a fork. voila! you have an easy dressing. just toss in your greens and coat them with the dressing. (it's easiest to do w/ tongs.) 
also, i made AMAZING cupcakes yesterday. i made vegan jelly donut cupcakes. they were seriously awesome and tasted like a donut, but lighter. it's so unlike me that i didn't take a picture for you! i will for sure make them again and i will take one next time.
